There are two Rich Copper Veins (Three, sometimes) in Wayfarer Foothills. The first is in the Shaman's Rookery just south-west of the Zelechor Hot Springs waypoint.
The second (And sometimes third) are at the far north-west of the map, in the alcove directly north of the Dawnrise Waypoint.

If you are trying to mine copper fast, these are your best bet.
